Happy May, Friends!
Are you a busy mom wishing that you had the time to find a new/healthy/not-so-time-consuming breakfast recipe? Are you tired of the same bowl of cereal, same pancake, same bowl of scrambled eggs with toast every morning?
Look no further! Scroll down and you will see my newly-found, go-to breakfast if I am looking for a healthy option that I can whip up in under 5 minutes. If you scroll even further...you will see my newly-found snack(gluten free, soy free, dairy free) that I LOVE when those sugar cravings kick in ;).
Crisp-Apple, Cranberry (+nut) Oatmeal
- 2 cups of Old Fashioned Oats
- (about) 2 tsp of cinnamon
- 2 chopped apples
- (about) 2 cups of water
- 1/3 cup of cashew/almond/cranberry/fruit mix (pictured below)
***Disclaimer: The amount of each ingredient mentioned above can be modified to your liking.
Directions:
- Put two cups of water into sauce-pan on stove & let it come to a boil.
- Once the water has come to a boil, stir in two cups of oats & turn down heat to simmer.
- Add in two chopped apples, two tsp of cinnamon, & 1/3 cup of nut/cranberry mix-stir thoroughly until ingredients are well-mixed.
- Allow mixture to simmer for about 1-2 minutes or until desired consistency is reached (I normally wait until some of the apple pieces are cooked down).
- Pour into bowl and ENJOY!
