The Reason I Haven’t Posted In A While

Happy March!

February was a world-wind. My son and I got sick with a cold that’s been going around. It lingered for over two weeks and left us feeling terrible. My husband got a round of it twice.
Amidst the chaos and sickness that invaded our home last month, I did try my hand in the kitchen at a new recipe.

In attempt to eat healthier, I am trying to avoid store-bought peanut butters etc. A few weeks ago I tried almond butter, which I discovered that I love! The more I looked into it though, the more I was lead to believe that homemade almond butter would be even healthier than store bought(due to added oils, sugars, preservatives...etc. found in store-bought versions).

Pinterest for the win again!
Ready to see how hard and complicated the recipe I found on Pinterest is? See bold letters below...;)!

Homemade Almond Butter

Ingredients/Directions:

Put about two cups of almonds in the oven until they are warmed. Put them in the blender with one tbsp. of coconut oil and blend until a consistent, paste-like substance is formed (aka ALMOND BUTTER).

That’s it! It’s that simple (the amount you want to make is a matter of personal preference. My first time making it, I started out with only two cups, since I wasn't sure what it would turn out like). Now you’ve got a version of almond that you know doesn’t contain artificial sweeteners, sugars, or preservatives. It’s clean and delicious. I use it in my oatmeal, to dip apples in, or enjoy it by itself as a snack! It's delicious ANY way.

Check in by the middle of next week for a new post, because I have some catching up to do & a great deal to share with you all!
